At Nurish we get inspiration from children. Their imaginations are free, desires innocent, and ideas life changing. So when a child recently approached us and asked why he couldn’t have cookies for breakfast we decided that was a problem we wanted to solve.
But it wouldn’t be right to indulge in sugar laden cookies in the morning. That would mean an energy crash later. Instead we decided to pack our breakfast cookies with delicious spices, healthy ingredients, and a pop of Nurish’s ‘Beta Glucan’ to set ourselves up for a healthy day with a yummy beginning.
What is MyNurish Beta Glucan?
It’s a magical immune boosting (non-stimulating) formula using gluten-free, oat beta glucan (oat B-glucan) – a super nutrient found in oats. Beta Glucan uses oat beta glucan to help lower serum cholesterol, triglycerides and blood glucose levels. It can also be a powerful defense for a weaken immune system. Great for those exposed to frequent sneezing, coughing and sniffling during the fall, winter and spring months.
Nurish Breakfast Cookies with ‘Beta Glucan’ Punch
Enjoy these cookies at anytime during the day. Pack them in a bag to take them on the go. Munch them up right when they are hot out of the oven. We love them in the morning, dipped in a little bit of raw honey.
- 1 scoop of ‘Beta Glucan’
- 2 very ripe bananas
- 1/2 Tbsp vanilla
- 1/2 Tbsp cinnamon
- 1 Tbsp raw cocao powder
- handful of blackberries
- 1/4 cup coconut flakes
- 3/4 cup oats
- splash of unsweetened nut milk (if the batter is too thick)
Preheat oven to 350 degrees. Peel then mash the ripe bananas and blackberries into a paste. pour in remaining healthy ingredients. If batter is a bit thick pour in a splash of coconut or almond milk.
Mold into small balls and place on a sheet pan covered in tinfoil.
Bake for 15-20 minutes until golden brown.
Enjoy alone or dipped in a little bit of raw honey!
