As I celebrate my 72 birthday today, I am reminded of that faithful day in 1997 when I walked out of the International Diabetes Center with a bag of needles and insulin. I was devastated! All I could think about was my father and the years he struggled with this disease before he passed away. Watching as he lost control of life as Neuropathy slowly ate away at his body. “Was I destined for a similar fate?”
Just as I felt myself falling down the rabbit hole, another thought crept into my mind. It was of my mother who was a vegetarian and who insisted that the key to a healthy life was to eat an abundant amount of good food such as fruits, vegetables and greens.
As a defiant child, I fought her and her crazy eating habits every step of the way and instead, I fell into the same “fast-food” trap that everyone did in the 50’s and 60’s. You see, fast-food dinners were just coming out and they were all the rage (as they still are) and I was loving every minute of it.
After my diagnosis, I was determined to make sense of what my mother had told me. “Could eating better really change my life? Could it be that simple?” After ten years of research that resulted in a complete overhaul of my diet, I became living proof that it could. But it wasn’t just eating better, it was about the quality and the power behind the food which I knew was the REAL story that needed to be told.
“If there was only a way to make eating [super] foods convenient, affordable and fun so that EVERYONE could experience life in a healthier way.” That became my battle cry for freedom. People did not have to accept their diagnosis – whatever it might be – in doom and defeat as I did and as millions do every year. With a drastic change in their diet, miracles could happen. With just a dab of faith fueled by the inspirational stories of others, we – each and every one of us – could change our lives by taking back our health!
Twenty years later, I am happy to report that I take about 1/3 the amount of insulin than the average diabetic takes daily. Today I celebrate 72 years of life and I am in great health both physically and mentally. And yes, I still train for marathons!
